How to choose the rotary oven for my bread factory?

First,assure the bread production. whats the quantity of bread we want to produce,like 100kg/hour,that will be 32trays rotary oven.or we want to make 200kg/hour, we can choose the 64 trays rotary kiln.

Second,assure which energy is available and cheap for us.We have three type of energy for choices,like gas,electric and diesel.
